Warm Rum and Raisin Rice Pudding.
   
Makes: 4 Servings
Ingredients:
100gr Jasmine Rice
600ml 2% milk
2ml Vanilla extract
pinch of salt
60gr Egg Yolks
100gr sugar
200ml ½ & ½ cream
60gr rum soaked raisins (see recipe)
½ oz Dark rum

Method
:

Wash rice well, combine with vanilla, milk & salt and simmer until tender (approx 30 min.) Combine yolks, sugar and ½ & ½ cream. Mix with the cooled rice, add raisins and rum. Ladle into large ramekins. Bake in a water bath at 350 degrees F. for 30 minutes.

Rum Soaked Raisins.

1oz Dark Rum

500ml simple syrup (equal parts water and sugar)

750ml raisins

Add rum and raisins to hot simple syrup. Allow to sit for 24 hours before using
