Directions:
In small bowl, mix cream cheese, ¼ cp of the almonds, the cherries and amaretto with spoon. Spoon into small re-sealable food storage plastic bag. Cut ½ inch off 1 corner of the bag.
With fingers, open apricots along one side so that they resemble partially open clamshells. Pipe about 1 tsp. of the cheese mixture into each apricot.
Finely chop remaining almonds. Dip cheese edge of apricots into almonds. Refrigerate 1 hour before serving to chill.
To toast nuts, bake uncovered in ungreased shallow pan in 350 degrees F oven 6 to 10 minutes. Stir occasionally, until light brown.
